Serves 4
1) Slice peaches into chunks. Add to a skillet with the butter and simmer.
2) Add vanilla, cinnamon and brown sugar. Continue to simmer until peaches are still firm but soft.
3) Add cognac and simmer until sauce is syrupy/thickened.
4) Scoop vanilla ice cream into a nice bowl. Top with a large scoop of peaches syrup over ice cream. Serve immediately.
